In case you missed it, Empire State South has a ramen pop-up series going every Sunday evening from 6-8PM at the bar only, brought to you by chef .
The ramen is changing every week – my one sampling being a delectable, sleep-inducing bowl of tonkotsu, which appears below with a strange frothiness (the chef was Vitamixing them to order, I presume to emulsify all the fat I happily ingested) and was chock full of well selected accompaniments and great funky flavors.
The $14 bowl may give some people pause, but Ivan Orkin and I will tell you it’s worth it. A good bowl of ramen is more costly and time consuming to make than that $40 lamb shank you love to buy on date night.
There are limits – I found a $44 pork ramen this weekend in Utah, which is down right ridiculous, though mad respect for their cajones. “We better not put prices on our online menu” – Wahso’s owner
