Ssam Burger

has opened on the Westside, near the corner of Defoors and Collier. They have been “Coming Soon” for quite a while, back when they were going to be called Ssam Sausage. Ssam means wrapped in Korean, so you can infer that we are talking about Korean flavors and things wrapped in other things.

I saw the initial inception of the sausage menu (heh) and the current menu looks like they’ve gone in the same direction with each item, except with burgers instead of sausage. The Vietnamese inspired sausage became the Vietnamese inspired burger. The tofu sausage became the tofu burger. And so forth.

As to why they changed from sausages to burgers, I’m told sausage production (heh #2) was an issue in their small space. I respect someone that can change a decision late in the game. Don’t go with something that feels wrong just because you are so far down a path.

On that note, I have no details of the Yum Bunz changes going on while they are closed, but I wonder if they are doing the same thing. If things aren’t clicking, shut it down, retool, and come back better. Don’t putter along hoping some external change will save the day.

Back to burgers. I had the kimcheese. You can guess and see what’s in it. I appreciate that it wasn’t overly done up just for the sake of being interested. I also enjoyed having some nice miso soup as a side on a cold night.

The burgers are worth a look if you are in the area. Slightly small for the H&F bun (so I’ve read but unconfirmed), the patty tastes fresh, had a well executed, grilled crispiness to the exterior, and the interior is loosely formed, just the way I like my meat (heh #3).
