As promised, here is the rib posting you have been waiting for!

I picked up 6 racks of ribs from Costco, they came in packs of 3 for about $28/each. Pretty good price. 

I also saw they had Sweetwater for $24/case, also a sweet pickup. 

First I got started on the rub. I found this a few years ago and have been very happy with it. I’m a big fan of dry rubs, and this is a good one that is salty, sweet, and has a touch of heat. Below is the recipe. 

Best Ribs In the Universe Rub – Enough for 3 Racks. 

  • 1/4 cup sugar
  • 1/4 non-iodized salt
  • 1/8 cup brown sugar
  • 4 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Next up is getting the smoker ready. I have a cheap one that works fine and fits 6 slabs perfectly. 

Using lump charcoal makes a difference. The bigger the better. 

Hickory wood chips with the holder that you put the chips in and then sit on top of the coals. You can put the chips inside aluminum foil and poke holes into it if you don’t have one of these. 

4-5 hours later, you have your ribs. I actually forgot to take photos because we all ate them so quickly. These are leftovers from today. Still very good. The photo at the top of the post is reheated ribs, still looking awesome.

The verdict: These were very good, but not the best I’ve made. I could have cooked them a little longer or applied a little more heat, but there were no complaints. It’s all about the rub and taking plenty of time. You can bake some good ribs, but the flavor from a smoker can’t be beat. They tasted fantastic with a big Georgia Tech win over Florida State.
