This isn’t the most exciting post ever, but I took a quick photo of today’s breakfast with my new iPhone (nerding it up hard here the past week or so).
I probably have this breakfast 2-3 times a week. I threw some thick and chewy sourdough from the Dekalb Farmer’s Market into the oven, then topped with just a tiny amount of cheddar cheese. While that was toasting I brewed some really strong coffee in my Bialetti stove top coffee maker, using illy fine ground espresso coffee. I used 6 ounces of water with the same amount of coffee I would use for a single espresso.
Then I fried an egg in the slightest amount of olive oil to over-medium (that’s how I like it), placed the egg on the now toasted but still chewy bread, and topped it with salt and fresh ground pepper. (Note: I just typed pepper before salt and it sounded strange in my mind. Does anyone say “Would you pass the pepper and salt?”. I think I’ve only ever heard salt precede pepper. Weird. )
It’s not the most healthy breakfast, but it’s not THAT bad, and it is always just enough and feeds my breakfast craving.
